Jemiko L. Solo, the chef and the founder of Senza Gluten by Jemiko (SGJ), began his culinary career as a 14-year-old teenager in Tbilisi, Georgia at the Austrian chain development - “Metechi Palace Hotel - Polo Hotels and Resorts'', nowadays known as Sheraton Metech Palace. His early career decision at such a young age was determined by a tragic passing of his father, after which he dearly wanted to help his mother to hold up the household. One of the main reasons he enjoys the kitchen life the most is because both of his parents were in the restaurant industry - while his father used to also be a chef, his mother was a cook. As of today he is very proud to continue their line of work as a chef and founder of SGJ.
Chef Jemiko started his career as an assistant in the kitchen to some of the greatest chefs in the world. Apart from starting his career at peeling the vegetables in the kitchen, he worked almost 8 years in the Hotels and gained practice in almost every station. He used to carry a personalized handwritten recipe book in his uniform where he collected dozens of recipes; some which he had learned and some which he had developed himself. The margins of the notebook were filled with never-ending notes with new techniques and ideas. After years of cooking, his main goal was to learn pastry and baking which he missed dearly and to have his own bakery one day. Little did he know it would happen in the vast streets of New York.
In 2002 he decided to move to the United States of America and pursue his studies at The Art Institute of NYC, after which he continuously worked at some of the prestigious Italian restaurants. His intention was to develop skills to perfection and gain as much knowledge as possible from different chefs around the world.
Several of Chef Jemiko’s close friends have celiac disease, and one day he made them a promise - someday he would open a place for whom eating gluten-free was a necessity. All the food would be strictly gluten-free, and guests would be able to dine without feeling uneasy. Chef Jemiko never wavered from his vision and believes that everyone should be able to enjoy delicious food and that no one should feel left out and uncomfortable. After keeping his promise, soon he opened a restaurant as well as the bakery for his beloved guests.

After 23 years of experience, in 2014 Chef Jemiko opened Senza Gluten Restaurant, the first 100% full dining Gluten Free Italian Restaurant in NYC, located at 206 Sullivan Street. It instantly became “to go place” not only for the tourists but mainly for the locals. His goal was to accommodate thousands of people with celiac disease as well as other allergies.
Chef Jemiko took on a new challenge after successfully running Senza Gluten Restaurant for four years, and in 2018 the Café & Bakery was established.
Apart from him enjoying new challenges, his main goal is to reach as many celiacs throughout the map as possible, which is why the Bakery offered nationwide shipping during the global pandemic, since many of the customers were not able to dine-in due to safety issues of pandemic.
In 2022, Chef Jemiko L. Solo decided to leave and separate from Senza Gluten Restaurant and rename his business to Senza Gluten by Jemiko. Since then, he has been concentrated on the Cafe & Bakery and most importantly he developed a new plan for opening a restaurant in Hell’s Kitchen in 2023 – Senza Gluten By Jemiko 100% Gluten-Free Restaurant.

After opening their doors in 2018 at Cafe and Bakery in Greenwich Village, it was time to introduce people to another heaven in the heart of Hell’s Kitchen, a place where everyone can enjoy Gluten-Free dishes without any worries which have always been his priority. His place has become “a must place to visit” not only for celiacs but everyone else all around the world.

A place where everyone feels safe, and a spark of joy on others' faces makes Chef Jemiko feel rewarded - the main reason why he loves cooking. Apart from his delicious Gluten-Free dishes, the Chef Jemiko plans to introduce some 100% Gluten-Free fresh homemade pasta to its customers and many more Gluten-free dishes. Considering how important people’s safety and happiness are to him, the restaurant will have vegan and dairy-free options as well. This Gluten-Free cuisine will be complemented by its elegant style and relaxing ambiance including its full bar, private dining for parties, cozy backyard and a sidewalk cafe located in the heart of Hell’s Kitchen.

Chef Jemiko’s dream and passion was to accommodate people with the taste of “without gluten” without any worries. In 2018, Senza Gluten by Jemiko Certified Gluten Free Café & Bakery was established. Within the walls of the small, cozy bakery came along many guests who have been admiring the cuisine the place offers in the center of Greenwich Village.
Walking distance from Washington Square Park and a 100-block West Village historic district you will find our cozy Café & Bakery, where you can enjoy our delicious baked goods. To perfectly describe the experience of our place is to wander through the streets of West Village through its architecture and historic integrity and discover our place and its harmonious ambience surrounded with an antique styled atmosphere. Each detail decision makes the space welcoming and warm for our customers.
